Cooking Kangaroo ― Flavours Of Melbourne by Charmaine O'Brien

I recently skimmed through this book, Flavours Of Melbourne: A Culinary Biography, and found some really useful information. I'm gonna cook kangaroo and I'm uberrrrr excited! Here are some pointers I jotted down. Can't wait!

―cook kangaroo meat as you would any other red meat
―BBQin' kangaroo meat is the closest to cooking it traditionally
―kangaroo meat is lean! steep it in a little oil prior to cooking
―ensure the BBQ is hot before placing meat on the grill
―sear the meat 3 minutes on each side
―kangaroo meat is best cooked rare or mid-rare
―buy the best quality kangaroo from The Chicken Pantry at the QV Market
